Cape Coastal Banana Split Breakfast

Serves: 2

INGREDIENTS
For the banana split
2 Bananas
6 Strawberries sliced
¼ cup Blueberries
1 cup Plain yogurt
¼ cup Grain-free granola
Drizzle of Cape Coastal Blue Gum Honey
For the granola
3 cups Unsweetened coconut flakes
2 cups Mixed raw nuts
2 tbsp Chia seeds
1 tsp Ground cinnamon
5 tbsp Coconut oil or butter, melted
1 tbsp Cape Coastal Raw Honey


METHOD
For the banana split
1. Peel bananas and cut each down the centre with a knife.
2. Heat a skillet over medium heat and spray with cooking spray. Add banana halves, split side down and let cook for 1-2 minutes, until the bottom is a little brown and the banana has softened a bit.
3. While bananas are cooling, wash blueberries and slice strawberries.
4. Grab two bowls and add two banana halves to each.
5. Add ½ cup of plain yogurt into each bowl.
For the granola
1. Preheat the oven to 130°C.
2. Combine all ingredients in a bowl and mix, and spread evenly on a baking tray.
3. Bake for 15 minutes until golden, rotating halfway through cooking time.
4. Remove from the oven to cool.
5. Store left over granola in an air tight container.
To serve
1. Add fresh berries and grain-free granola.
2. Drizzle a bit of Cape Coastal Blue Gum Honey over each dish and serve.
